How to Compile Dynamic NGINX Modules Discussion

Hi,
Thanks a ton for this blog. This is what I have been looking for.
I got stuck one place. I am navice so the question.

I have centos to install nginx and add another module and offcourse getting binary compatibility issue. When I do nginx -V, I am getting following:

nginx version: nginx/1.16.1
built by gcc 4.8.5 20150623 (Red Hat 4.8.5-39) (GCC) 
built with OpenSSL 1.0.2k-fips  26 Jan 2017
TLS SNI support enabled

Now the question is, how can I ignore cc-opt where I can see it is looking for specs in '/usr/lib/rpm/redhat/' folder and in centos I dont get folder.
Can I just ingnore these step?

Also why did I get nginx compiled with redhat when I did yum install nginx in centos7
